Waterford Gaia is made from organic Irish barley grown on six farms. It is a complex and viscous whisky with an amazing purity and precision. Gaia, the neopagan goddess of 'Mother Earth' is a fitting name.
The whisky is the first release from the second harvest of organic barley that Waterford distilled. It was fermented for 181 hours and aged for 4 years and 7 months. The liquid has a rich texture with notes of fig rolls, grapefruit, orange zest, cherry and liquorice with a long and complex finish.
