This is Boatyard Distillery's interpretation of the Old Tom gin style, which tends to sit between genever and London Dry gin in terms of sweetness – and is known as "the missing link". Boatyard Old Tom is distilled in a copper alembic pot still affectionately called Érainn. The spirit then rests in hand-picked first-fill Pedro Ximénez sherry casks, imparting the liquid with natural sweetness and richness. Finally, a small amount of PX sherry is added. The resulting gin is velvety smooth, with notes of candied lemon peel, vanilla and cinnamon unfolding to a silky orange finish. Excellent in a classic Martinez cocktail or mixed with ginger ale.

Tasting Notes
Nose
Freshly grated orange and lemon zests, with honey, pine and spiced caramel. The citrus notes give a freshness contrasted by the darker, richer and spicier notes.
Palate
Rich and rounded mouthfeel with the pine and honey from the nose at its core. The pine notes build, with toffee joined by green leaves, gently floral notes and warming spice. Savoury and earthy notes bring up the rear.
Finish
Sweet hay, freshly mown grass and pine needles linger.
