Drumshanbo Single Pot Still Irish Whiskey is the first global release from The Shed Distillery of PJ Rigney. The whiskey is triple distilled and non-chill filtered using malted and un-malted Irish barley and Irish barra oats. The unusual inclusion of barra oats gives the whisky depth and an elegant, creamy texture. Every drop is made at the distillery, the first to be opened in Connaught in over 100 years, with Head Distiller Brian Taft tasting and hand-selecting every single cask, guaranteeing absolute consistency in each bottle. Three copper pot stills distil around one cask of spirit each day, making it truly small batch. The whiskey is then aged in Kentucky Bourbon and Sherry Oloroso casks with no added colourings, ensuring that the whiskey is smooth and elegant with subtle notes of spice.

Tasting Notes
Nose
Toffee, caramel and a pinch of white pepper lead to orchard fruit and a touch of crunchy barley-sugar sweetness. Fruity notes of stewed apple and pear are joined by drizzled cream and spiced pastry – a perfectly formed fruit pie.
Palate
The cream leads on the palate, with spice bursting through – white pepper, aniseed, nutmeg and a touch of gently warming cinnamon. The fruit from the nose follows, with crunchy just-ripe pears joined by well-balanced sweet-and-sour apples. Brown sugar and digestive biscuits bring up the rear, with hints of bourbon whiskey and toffee.
Finish
Gentle cake spice lingers along with the apples from the palate and barley sugar sweetness.
Comment
A creamy pot-still whiskey that brings together fruit and spice with a rich mouthfeel, lingering spice and a hint of brown-sugar sweetness.
